200,000 Waiters?

I just read in TimeOut NY that there are approximately 200,000 employed waiters/waitresses in the state of NY. That isn't even counting those who aren't on the books. We are such a food obsessed state/country. I wonder statistically how we measure up to people of say 100 years ago (or more). What does this say about us as a state/nation?
